What we ate: birthday dinner!

Today is my birthday! So instead of making dinner with my friend and watching TV, my Mom made my favorite meal! And then we all ate it together! And, like always, it was the best.

What we ate: Chicken Mimi (I do not know where this name came from. My Mom got the recipe at a funeral. Ahaha.)


6-7 bonelss chicken breasts
10 oz swiss cheese
1 can cream of mushroom soup
1/4 c white cooking wine
1 box chicken stove top stuffing
some butter (melted or butter spray)
cooking spray


preheat oven to 375 degrees

-Combine wine and soup in a bowl.
-Spray down a cake pan (or square pan)
-Layer ingredients in pan in this order: Chicken,cheese, soup, stuffing, and then spray or drizzle butter on top.
-Cover with foil
-Bake for 1 hour, removing foil for the last 10 minutes (to let it crisp up!)

Let sit for 10 or so minutes before serving.


Obviously we had cake after! Well, “cake.”

I loved it!

I did NOT love the whale beer we found.It looked so promising!

Drinking it was a mistake. Although, I don’t like a lot of beer.

I tried to plug through.

But I had to give up. And of all people, my Gram had to show me up! She looks embarrassed to be next to me.

Hahahahaha, gotcha! She was just smelling it. That adorable little lady doesn’t drink! C’mon!

    Happy happy happy happy birthday! And that recipe looks yummy. I don’t like beer either.
