WWA: Bacon & Chicken wraps

I found this recipe on Pinterest and knew I had to try it because it combines (basically) the only meats I eat: chicken and bacon!

Ingredients:
- 4 chicken breasts, cut into thirds (we bought the trimmed and cut pieces which come with about 12 pieces in the package, because I’m lazy and didn’t want to cut it up, aha)
- 1 package of bacon
- garlic powder
- chili powder
- paprika
- brown sugar
- salt and pepper
- cooking spray

Prep&Cook:

Preheat the oven to 400 degrees and lightly spray an oven-safe dish with the cooking spray. Set aside.

We started by rinsing and tenderizing the meat.

While Ryan worked the chicken, I made two bowls of spice mixes. They both had garlic powder, salt, and pepper, but one had chili powder and the other had paprika (because I’m not a huge fan of spicy things). I didn’t measure, I just sort of kept adding stuff until it looked like there would be enough to cover the chicken.

We covered both sides of the chicken in seasonings:

Folded the pieces in half and wrapped them in bacon:

Rolled them in brown sugar and placed them in a the oven-safe dish.

We cooked them for about 35 minutes. I was afraid the chicken would dry out but I also wanted the bacon to get crispy. During cooking, we periodically removed some of the bacon grease, and we turned the chicken wraps about half way through.

And here we go!

Ryan is all about presentation (see above), while I just threw a few on a plate and picked them apart (not pictured) aha.

The chicken did get a little drier than we would have liked, but it was still delicious! Next time we’re going to use thicker pieces of  meat.

What we ate, pizza with friends!

On Sunday nights, I get together with some friends to watch Game of Thrones (although we’ll have to find something new to watch now since the season finale was Sunday).  And usually, we eat! This past Sunday, we styled our own pizzas.

We each made our own mini pizza and then combined efforts to make a big one. Which, naturally, everyone was too full to eat. I’ll spare you the ingredients and just share the results.

Claire made a white-sauce pizza with bacon and broccoli:

Kevin put a lot of corn and cheese on his:

Jordan put everything on his:

I tried pickles on mine. I wasn’t sure if I would like it so I only put them on one side. And I liked them!

For our group pizza, we sectioned the crust up with food coloring and each took a quarter. Here’s pre-cooked, where you can see more of the ingredients:

And after it was cooked:

We all know that pizza is one of my favorite foods, but this pizza was especially good because we had so much fun making it! We wore fun aprons and passed judgement on each other’s choices. Livin’ the good life, pizza stylin’ style.

What we ate: pheasant

When my friend said he ordered a pheasant and some quail eggs off Amazon, I thought he was kidding. When we had to look up some pheasant recipes, I still didn’t think it was a big thing. Oh, but then he brought a smoked pheasant and 2 dozen quail eggs to my house so… I guess he was serious.

This is the story of the pheasant.

We found this pheasant recipe on the Food Network’s website. I think you should be able to guess by now that we tweaked the recipe.

Ingredients:

1 small pheasant (we used a smoked one)

2 tablespoons olive oil
1 onion, diced
4 sage leaves
2 bay leaves3 cloves garlic, chopped
2 rosemary branches
1 14-oz can peeled tomatoes and their juices
1 can chicken broth
8 slices pancetta
1/4 cup chopped fresh parsley

Prep&Cook

Quarter the bird (or tear it up. Which ever is easier) and put it in a skillet with the oil.

Sear it on all sides (or just cook it for a while, turning occasionally, because you aren’t sure what sear means.) Remove from skillet and set aside.

Add onions, sage, bay leaves, rosemary, garlic, and parsley and mix it around until the onions start to brown.

Add the broth and tomatoes, bring to a boil.

Wrap your pheasant pieces in the pancetta and set them back in the pan.

Simmer, uncovered, for 30 minutes.

We cooked off all the liquids and ran out of chicken broth. So I popped open a can of chicken soup and used the broth from that. Sometimes, you have to get creative.

Remove bird pieces to a platter, and if there’s any liquid left in the pan it can be used for a sauce. We didn’t have a sauce.

(Featured here with scrambled quail eggs!)

Eat!

I would suggest NOT using a smoked pheasant. Or, if you have a smoked pheasant, find a recipe to accommodate it.

What we ate: maple bacon pancake

I love bacon.

Last Thursday we made a maple bacon pancake, which we found at allrecipes. At first I was like, “Uhm, that sounds too weird. Plus pancakes make me VERY thirsty. Maybe we can find a different recipe?”

Good thing we didn’t because this was delicious!

Ingredients:

- 4 ounces bacon (we used a whole package)

- 1 cup pancake mix (we used Aunt Jemima, much to the distress of my mom. She’s a confirmed Bisquick user.)
- 1 1/4 cups shredded Cheddar cheese, divided
- 1/2 cup milk
- 1/4 cup maple syrup
- 2 tablespoons white sugar
- 2 eggs
- cooking spray!

Prep&Cook:

- Preheat oven to 350 degrees

- Cook the bacon! Then make it into bacon crumbles.

- Spray a 9 inch glass pie plate (or, you know, whatever you have) with cooking spray.

- Combine pancake mix, 3/4c cheese, milk, maple syrup, sugar, and eggs. Pour into the pie plate.

- Bake 10 to 15 minutes, or until you can jab it with a tooth pick and the pick comes out clean.

- Top with remaining cheese and all the bacon that you haven’t eaten yet, and bake another 5ish minutes (until the cheese is melted).

-Eat!

what we ate: blooming pizza bread

Yum!

We found this recipe at The Girl Who Ate Everything. There are TONS of awesome recipes on this blog, so I suggest checking it out.

Ingredients:

1 unsliced round loaf sourdough bread
12-16 ounces mozzarella or Provolone cheese, thinly sliced (we used shreds)
1 (3.5 ounce) package pepperoni, halved (we also used bacon bits)
1/2 teaspoon garlic powder
1/2 teaspoon Italian seasonings
2 Tablespoons Parmesan cheese
pizza/marinara sauce for dipping

Directions:
Preheat oven to 350 degrees.

Cut the bread lengthwise and widthwise without cutting through the bottom crust.

Place bread on a foil-lined baking sheet and sprinkle cheese shreds and meat bits into the cuts . Combine butter, garlic powder, and Italian seasonings. Drizzle over bread.

Wrap bread completely in foil and bake for 15 minutes. Unwrap the bread and bake 10 more minutes, or until cheese is melted and meat is a little crispy.

What we ate: Grilled Chicken Bruschetta!

And by “grilled” I mean we cooked it in a pan with oil and followed almost none of the recipe.

We found this recipe on PunchFork.com, with the appeal being 1) chicken and 2) easy.

But what’s easier than easy? Skipping a bunch of the steps!

I honestly don’t understand how my friend puts up with my shenanigans.

This was right after I used the recipe as a cutting board.

Basically we were supposed to combine everything together and then grill the chicken and lay the everything and the cheese over the chicken and eat. Yum!

Instead, I cooked the chicken in oil while my friend cut up more onion and tomatoes than the recipe asked for. Then I more than doubled the sauce part and threw it on top of the chicken before it was done cooking because I wasn’t sure when it was supposed to be added. We tossed the tomatoes and cheese on top and then waited to long before we started eating and had to nuke it in the microwave.

This will make more sense if you look at the recipe first. Which I didn’t. And I was cooking it.

“Grilling” the chicken:

Uh oh. There’s my “making it up as I go” face.

It looks pretty good considering the directions were ignored. And it tasted pretty good too. Quick! Can you spot the Pokemon?!

Look close.

And eventually we got this yummy little dish!

But not before we forgot the basil

and I made another “I have no idea what I’m doing” face.

I make this face every day. Mostly without realizing.

What we ate: Crunch Wraps!

Taco Bell crunch wraps are easily one of my favorite foods. I don’t like beef, but I like these multi-layered tacos of beefy goodness. Yum:

What could be more fun than eating one of these? That’s right, making our own. Then eating them.

Instead of beef, we like to use chicken. But we couldn’t find any (apparently the food store only carries it sometimes?) so we used ground turkey. Basically once you dump that seasoning stuff all over it, it doesn’t matter WHAT you used. It’s still going to taste delicious.

Mixing up some taco turkey :)

Cutting up some tomatoes.

Taking pictures of the ingredients.

Uhm, then we got a little lax… What you want to do is put some meat and cheese sauce in the center of a soft taco. Cover with a little round hard taco. Top with lettuce, tomato, shredded cheese, fold up. Spray with pam and toast both sides on a skillet.

I pretty much just want to eat these every day.

What we ate!

For almost a year now, my friend and I have been getting together on Thursdays to watch TV and make dinner. USUALLY I decide on frozen pizza with bacon on it. Yum. Sometimes, though, we get a little crazy and actually find a recipe and make real food. And sometimes (on TOP of that) I remember to take pictures!

So here’s “What We Ate,” the 10-13-11 edition.

I found this recipe for “Quick and Easy Chicken” (sounds like a floozy) on Allrecipes.com. My one wish is that it had a better name. But it still turned out really good!

There I am, teaching that easy chicken a lesson.

Naturally, we altered the recipe before even giving it a chance. My friend added some maple syrup to it when I wasn’t paying attention, which SOUNDS gross but isn’t. Next time we’re going to sub out the ketchup for BBQ sauce. And measure the pepper instead of dumping it in (my fault, oops).

He’s laughing because I was clicking photos like a paparazzi. You have to, to get a good one!

The recipe also said we should drink Riesling wine with it, which we could not find. So we got a pretty bottle of red instead.

Sample size for my mom. You know that story? If you give a mouse a cookie? He’s going to want some milk? Similar concept with my mom and a full-sized wine glass.

And there you have it, the Quick and Easy Chicken (aka Floozy Chicken) final product! With green beans.
