While stumbling around the internet, I came across this little recipe for a “Baked Egg Boat.”
“What an elaborate name!” my brain said. “We’ll NEVER remember that!” And instantly I started calling it an egg canoe. Totally not on purpose. I honestly forgot the name. Immediately. I didn’t even know that ‘boat’ or ‘egg’ was in the name until I went to type up this post.
Anyway, it’s super easy and delicious! But instead of pancetta, we used bacon bits. Precooked and pre-cut. And instead of the cheese it called for, we used asiago. And instead of four little sour dough boats, we used a french baguette!
Yeah. That happened.
In retrospect, we should have skipped the salt because the cheese and bacon were loaded. Oops.
